Kaassous 60 g botter 1/3 k meel 1 l melk ¾ k parmesaankaas, gerasper knippie fyn neutmuskaat
Verhit olyfolie in ʼn pan en braai die ui, seldery, knoffel en wortel tot sag. Voeg maalvleis by en braai tot bruin. Voeg die wyn, tamaties, tamatiepasta en souse by. Geur met sout en peper by en prut 1 uur tot dik. (Hou dop en gooi ʼn bietjie water by as dit lyk of dit droogkook). Maak die kaassous deur die botter te smelt, voeg die meel by en kook 2 minute. Voeg die melk stadig by, klits aanhoudend tot dik. Voeg die ¾ koppie kaas by en sit eenkant.
Plaas ʼn laag lasagnevelle onderin ʼn groot bakpan. Skep die helfte van die maalvleis op en gooi die helfte van die sous oor. Doen laag vir laag dieselfde en eindig met sous. Sprinkel met die ½ koppie parmesaan en bak 45 minute by 180ºC tot die pasta gekook is en die kaas goudbruin is.

(Serves 6-8)
1 onion, finely chopped 1 carrot, finely grated 1 celery stick, finely chopped 2 garlic cloves, crushed 500 g beef mince 1/3 c red wine 2 tins tomatoes 3 T tomato paste 2 T soya sauce 2 T worcestershire sauce 1 T dried oregano 2 T chopped parsley 18 lasagne sheets ½ c grated parmesan cheese
Cheese sauce 60 g butter 1/3 c flour 1 L milk ¾ c grated parmesan cheese pinch ground nutmeg
Heat some olive oil in a pan and sauté the onion, celery, garlic and carrot until soft. Add the mince and fry until brown. Add the wine, tomatoes, tomato paste and sauces. Season with salt and pepper and simmer for 1 hour until thick. (Keep an eye on the sauce, adding water if it looks dry). Make the cheese sauce by melting the butter and adding the flour. Cook for 2 minutes. Add the milk gradually, whisking constantly until smooth and thick. Add the ¾ cup cheese and set aside.
Place lasagne sheets in the bottom of a casserole dish, top with half the mince, half the cheese sauce and then repeat the process finishing with the cheese sauce and topping with the ½ cup cheese. Bake for at 180ºC for 45 minutes until the pasta is cooked and the cheese is golden brown.
